Ingredients

4 cups all-purpose flour (plus extra for dusting)

1 packet (2¼ teaspoons) active dry yeast

1 cup whole milk, warmed (approximately 110°F/43°C, not hot)

½ cup granulated sugar

½ cup unsalted butter, melted (plus extra for greasing)

2 large eggs, at room temperature

1 teaspoon salt

1 tablespoon ground cinnamon

½ cup brown sugar, packed

1 teaspoon vanilla extract

1 cup powdered sugar (for frosting)

2 tablespoons cream cheese, softened (optional, for frosting)

3–4 tablespoons milk (for frosting)

Instructions

In a medium mixing bowl, combine the warmed milk, granulated sugar, and active dry yeast. Stir gently and let the mixture sit for about 5-10 minutes, until it becomes frothy and bubbly, indicating the yeast is activated.

In a large mixing bowl, whisk together the melted butter, eggs, salt, and vanilla extract until well combined. Pour in the frothy yeast mixture and stir until everything is nicely blended.

Gradually add the all-purpose flour, mixing with a wooden spoon or spatula until a soft dough begins to form. Transfer the dough to a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic in texture.

Lightly grease a large bowl with butter. Place the kneaded dough in the bowl, cover it with a clean kitchen towel, and let it rise in a warm environment for about 1 hour, or until it has doubled in size.

While the dough is rising, prepare the cinnamon filling by mixing the packed brown sugar and ground cinnamon in a small bowl until evenly combined.

Once the dough has risen, gently punch it down to release excess air. Roll it out on a floured surface into a rectangle measuring approximately 16x12 inches, ensuring an even thickness.

Brush the melted butter generously over the surface of the dough, leaving a small margin around the edges. Sprinkle the cinnamon sugar mixture evenly over the buttered surface, ensuring full coverage.

Beginning with the long edge, carefully roll the dough tightly into a log. Pinch the seams and ends to seal the roll, ensuring the filling stays inside.

Using a sharp knife or dental floss, slice the log into 12-15 equally sized rolls to maintain uniform baking. Arrange the rolls in a greased baking dish, leaving a small space between each roll to allow for expansion.

Cover the rolls with a cloth and allow them to rise again for an additional 30 minutes while preheating your oven to 350°F (175°C).

Bake the rolls in the preheated oven for 20-25 minutes, or until they are golden brown on top and cooked through. Allow them to cool slightly in the dish while you prepare the frosting.

In a mixing bowl, combine the powdered sugar, softened cream cheese (if using), and enough milk to achieve a smooth, pourable consistency. Beat until creamy and fully combined. Adjust the amount of milk to your preference.

Drizzle the frosting generously over the warm cinnamon rolls just before serving, allowing it to melt slightly into the crevices.
