1/2 teaspoon smoked paprika

1/4 teaspoon ground cumin

Salt and freshly cracked pepper, to taste

1/2 cup diced celery

1/4 cup finely diced red onion

1/4 cup chopped fresh parsley

4 slices whole-grain bread

Leafy greens of your choice (e.g., fresh spinach or arugula) for serving

Instructions
 

In a large mixing bowl, use a fork to mash the drained chickpeas. Aim for a chunky texture, leaving a few whole chickpeas for added bite.

    Add the Greek yogurt, Dijon mustard, fresh lemon juice, garlic powder, smoked paprika, cumin, and a sprinkle of salt and pepper. Mix thoroughly until all ingredients are well combined and creamy.

      Gently fold in the diced celery, finely chopped red onion, and chopped parsley, ensuring that all ingredients are evenly distributed without over-mixing.

        Taste the chickpea mixture and adjust seasonings if desired. You may want to add a squeeze more lemon juice or an extra dash of spices to brighten the flavors.

          Place a layer of leafy greens on two slices of whole-grain bread, covering them generously. Evenly spoon the chickpea mixture over the greens, spreading to the edges for maximum flavor in every bite.

            Top with the remaining slices of bread to complete the sandwiches, pressing down lightly to hold everything together.
