Preheat your oven to 350°F (175°C). Prepare a 9x13 inch baking pan by greasing it lightly with butter or lining it with parchment paper for easy removal later.
In a large mixing bowl, whisk together the melted butter and granulated sugar until the mixture is smooth and fully blended.
Incorporate the eggs into the mixture one at a time, ensuring to mix thoroughly after each egg is added. Then add the vanilla extract and stir until well combined.
Sift together the all-purpose flour, cocoa powder, baking powder, and salt directly over the wet ingredients. Gently fold the dry mixture into the wet ingredients using a spatula until they are just combined—be cautious not to overmix as this will affect the texture of your brownies.
Pour about half of the brownie batter into the prepared baking pan, spreading it evenly with a spatula to ensure an even layer.
Place the halved strawberries on top of the brownie batter, pressing them down gently but firmly so that they nestle into the batter.
Spoon the remaining brownie batter over the strawberries, using a spatula to spread it out gently and ensure the strawberries are covered.
Bake in the preheated oven for 30-35 minutes. Check for doneness by inserting a toothpick into the center— it should come out with a few moist crumbs clinging to it, but not wet batter.
While your brownies are baking, prepare the chocolate coating. In a microwave-safe bowl, combine the semi-sweet chocolate chips with the coconut oil. Heat in the microwave in 30-second intervals, stirring after each interval until the chocolate is completely melted and smooth.
Once the brownies are done, remove them from the oven and allow them to cool in the pan for about 15 minutes. Then, carefully transfer them to a wire rack to cool completely.
After the brownies have cooled, pour the melted chocolate mixture over the top, allowing it to drizzle down the sides. You can spread it evenly for a smooth finish, or create swirls for a decorative look.
Let the chocolate coating set at room temperature for about 30 minutes. For quicker setting, place the brownies in the refrigerator. Once the chocolate has hardened, slice the brownies into squares and serve.
Notes
Serve on a decorative plate, garnished with extra halved strawberries and a light dusting of powdered sugar for an elegant touch.
