In a medium-sized saucepan, combine the white chocolate chips with the sweetened condensed milk. Place the saucepan over low heat and stir continuously until the chocolate is melted and smooth.
Remove the saucepan from the heat and stir in the chopped dried cranberries, orange zest, orange juice, vanilla extract, and a pinch of salt until well mixed.
If using nuts, gently fold in the chopped walnuts or pecans.
Pour the fudge mixture into the prepared baking dish and smooth the top with a spatula.
Refrigerate the baking dish for 2-3 hours or until the fudge is firm to the touch.
Lift the fudge out of the dish using the parchment paper and cut into squares or rectangles.
