1 medium onion, finely chopped

4 cloves garlic, minced

1 can (28 ounces) high-quality crushed tomatoes

2 cups vegetable broth (preferably low-sodium)

1 teaspoon granulated sugar

1 teaspoon dried oregano

Salt and freshly ground black pepper to taste

1 cup heavy cream (or substitute with coconut cream for a dairy-free version)

1/2 cup fresh basil leaves, roughly chopped

Instructions
 

In a large pot, warm the olive oil over medium heat. Once hot, add the chopped onion and sauté for 5-7 minutes, stirring occasionally, until the onion is softened and translucent.

    Introduce the minced garlic and sauté for an additional 1-2 minutes, or until fragrant, taking care not to burn the garlic.

      Carefully pour in the crushed tomatoes and vegetable broth, stirring well to combine all ingredients.

        Add the sugar, dried oregano, and season with salt and pepper to taste. Bring the mixture to a gentle simmer, allowing it to cook uncovered for about 15 minutes so the flavors can meld beautifully.

          Once the simmering time is complete, use an immersion blender to purée the soup until it reaches a smooth consistency. If you don’t have an immersion blender, transfer the mixture to a countertop blender in batches, ensuring to allow steam to escape to avoid splattering.

            Pour the smooth soup back into the pot and stir in the heavy cream. Heat the soup over low heat, stirring occasionally, until it is warmed through but not boiling.

              Remove the pot from heat and gently fold in the chopped fresh basil. Taste and adjust seasoning with more salt and pepper if needed.

                Serve the soup hot, drizzling with balsamic glaze for a touch of sweetness and elegance if desired.
