2 cups fresh strawberries, hulled and sliced

2 tablespoons granulated sugar, divided

2 cups all-purpose flour

2 tablespoons baking powder

1/2 teaspoon salt

1/3 cup unsalted butter, cold and cubed

1 cup heavy cream, plus extra for serving

1 teaspoon vanilla extract

Prepare the Strawberries: In a medium-sized bowl, mix the sliced strawberries with 1 tablespoon of granulated sugar. Toss gently to ensure the strawberries are coated. Allow them to macerate for 15 to 30 minutes, which will help them release their sweet juices and enhance their flavor.

    Make the Shortcake: Preheat your oven to 425°F (220°C) so it’s hot when the shortcakes are ready to bake. In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and the remaining 1 tablespoon of granulated sugar. Whisk together until well blended.

      Incorporate Cold Butter: Add the cold, cubed unsalted butter into the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture turns crumbly and resembles coarse meal, with some pea-sized pieces remaining for texture.

        Add Cream and Vanilla: Pour in the heavy cream and add the vanilla extract. Using a fork, gently mix the ingredients just until the dough starts to come together; avoid overmixing to keep the shortcakes tender.
