Instructions
Begin by pouring 4 cups of water into a medium saucepan and place it over high heat. Bring the water to a rolling boil.
Once the water reaches a boil, remove the saucepan from the heat source. Immediately add the black tea bags and freshly grated ginger to the hot water. Cover the saucepan and let it steep for 5 to 7 minutes. The longer it steeps, the stronger the flavor will be; adjust according to your preference.
After the steeping time, carefully remove and discard the tea bags. Stir in the honey or sugar until it's completely dissolved in the warm tea mixture.
Allow the tea to cool down to room temperature. For quicker cooling, you can place the saucepan in a shallow ice bath.
Once the tea has cooled, strain it through a fine-mesh sieve into a large pitcher to remove any sediment. Add the sliced peaches to the pitcher, stirring gently to combine.
Cover the pitcher and refrigerate for at least 1 hour—this chilling period allows the flavors to meld beautifully.
When ready to serve, fill each glass with ice cubes, then pour the chilled ginger peach tea over the ice, filling the glass to the desired level.
For an eye-catching presentation, garnish each serving with a fresh slice of peach and a sprig of mint.
