Instructions
Prepare the Foil Packets: Start by cutting two large pieces of aluminum foil, each large enough to comfortably fit one salmon fillet along with the vegetable medley.
Season the Salmon: Place one salmon fillet in the center of each foil piece. Drizzle 1 tablespoon of olive oil over each fillet, and sprinkle the minced garlic, salt, and freshly ground black pepper on top.
Add Vegetables: On top of each salmon fillet, arrange a layer of sliced zucchini and bell pepper. Place two to three lemon slices over the vegetables.
Incorporate Dill: Sprinkle the freshly chopped dill evenly over the salmon and vegetables in each packet.
Seal the Packets: Gently fold the sides of the foil over the salmon and vegetables, creating a sealed packet while leaving space for steam to circulate.
Grill the Packets: Preheat your grill to medium-high heat. Place the foil packets onto the grill grates and cook for approximately 12 to 15 minutes.
Serve: Carefully open each foil packet, plate the salmon and vegetables directly from the packets, and enjoy your flavorful dish!
