Instructions
Preheat the oven to 375°F (190°C).
In a mixing bowl, whisk together honey, Dijon mustard, apple cider vinegar, garlic powder, onion powder, and a dash of salt and pepper until smooth.
Place the chicken breasts into a baking dish and pour half of the honey mustard marinade over them, spreading it evenly.
In another bowl, toss the green beans and baby carrots with olive oil and a sprinkle of salt and pepper.
Arrange the seasoned vegetables around the chicken in the baking dish and drizzle the remaining marinade over everything.
Cover the baking dish with aluminum foil and bake for 25 minutes.
After 25 minutes, remove the foil and bake for an additional 15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Let the dish rest for about 5 minutes before serving.
Garnish with fresh chopped parsley before serving.
Notes
Serve with crusty bread or a fresh side salad for a complete meal.
