Begin by preheating your oven to 400°F (200°C), setting the stage for perfectly crispy chickpeas.
Pat the drained chickpeas dry using a clean paper towel, eliminating excess moisture. Spread them out evenly on a baking sheet. Drizzle 1 tablespoon of olive oil over the chickpeas, then sprinkle with garlic powder, paprika, salt, and pepper. Toss gently to ensure each chickpea is evenly coated with the seasonings.
Place the baking sheet in the preheated oven and roast the chickpeas for 20-25 minutes, stirring halfway through to promote even browning. They should emerge crispy and golden brown.
While the chickpeas are baking, whip up the creamy dressing: in a medium-sized bowl, combine Greek yogurt, lemon juice, Dijon mustard, Worcestershire sauce, and the remaining 2 tablespoons of olive oil. Whisk everything together until the mixture is smooth and well blended.
In a large salad bowl, add the chopped kale. Pour the prepared dressing over it, and with clean hands, massage the kale gently for 1-2 minutes. This process tenderizes the kale and allows it to absorb the flavors from the dressing beautifully.
