Instructions
In a large mixing bowl, thoroughly combine the ground chicken, lemon zest, lemon juice, chopped parsley, chopped basil, minced garlic, breadcrumbs, grated Parmesan cheese, egg, salt, and pepper.
Using your hands, gently mix all the ingredients until they are well incorporated. Take care not to overmix, as this can make the meatballs tough.
Preheat your oven to 400°F (200°C).
Prepare a baking sheet by lining it with parchment paper for easy cleanup.
To form the meatballs, wet your hands to prevent sticking, then scoop out a portion of the mixture and roll it into 1-inch balls. Arrange the formed meatballs on the prepared baking sheet, leaving space between each one.
Lightly drizzle olive oil over the meatballs to help them brown during baking.
Place the baking sheet in the preheated oven and bake for 15-20 minutes. The meatballs are done when they're cooked through and lightly browned. To check for doneness, cut one in half; it should be completely cooked with no pink remaining in the center.
After baking, remove the meatballs from the oven and allow them to cool for a few minutes.
Serve the meatballs warm, garnished with additional lemon slices and scattered fresh herbs, if desired. Enjoy your fresh and flavorful dish!
Notes
Be careful not to overmix the meatball mixture to keep them tender.
