Pistachio Filled Croissants

Ingredients
  

1 package of puff pastry (2 sheets, thawed)

1 cup shelled pistachios, finely chopped

1/4 cup granulated sugar

1/4 cup unsalted butter, softened at room temperature

1/2 teaspoon almond extract

1 large egg (for egg wash)

Powdered sugar (for dusting after baking)

Instructions
 

Begin by preheating your oven to 400°F (200°C). While the oven heats up, prepare your baking sheet by lining it with parchment paper.

    In a medium mixing bowl, combine the finely chopped pistachios, granulated sugar, softened unsalted butter, and almond extract. Use a spatula or fork to mix these ingredients until they form a smooth, cohesive paste that holds together well.

      Lightly flour your work surface and roll out each sheet of puff pastry to ensure it’s thin and even. Once rolled out, cut each sheet into triangles, ensuring they are approximately 4 inches wide at the base.

        At the base of each triangle, place a heaping tablespoon of the prepared pistachio filling. Be careful not to overfill, as this can cause spillage during baking.

          Starting from the base of each triangle, carefully roll the pastry up towards the tip, making sure to maintain tightness to form a lovely crescent shape.

            Arrange the rolled croissants seam side down on the prepared baking sheet, leaving enough space between each pastry for spreading as they puff up while baking.

              In a small bowl, beat the egg until well mixed. Using a pastry brush, gently apply the egg wash over the tops of each croissant. This will give them a beautiful golden-brown finish.

                Place the baking sheet in the preheated oven and bake for 15-18 minutes, or until the croissants are puffed up and beautifully golden brown in color. Keep an eye on them to ensure they don’t over-bake.

                  Once baked, remove the croissants from the oven and allow them to cool on the baking sheet for a few minutes. Before serving, dust the tops lightly with powdered sugar to add a sweet finishing touch.
