1 cup rolled oats

2 cups vegetable broth (or water)

1 tablespoon olive oil

1 clove garlic, finely minced

1 cup fresh spinach, coarsely chopped

1 medium ripe tomato, diced

1 teaspoon soy sauce or tamari

1 teaspoon sesame oil

Salt and freshly ground black pepper, to taste

2 large eggs

Chopped green onions, for garnish

Crumbled feta cheese (optional, for a creamy finish)

Instructions
 

Prepare the Oats: In a medium saucepan, bring the vegetable broth (or water) to a vigorous boil.

    Cook the Oats: Once boiling, stir in the rolled oats and reduce the heat to low. Allow the oats to simmer for about 5 minutes, stirring occasionally to achieve a creamy consistency.

      Sauté the Aromatics: While the oats are cooking, heat the olive oil in a separate skillet over medium heat. Add the minced garlic to the skillet and sauté for 1 minute, until it becomes fragrant.

        Add the Greens and Tomato: Incorporate the chopped spinach and diced tomato into the skillet. Cook for an additional 2-3 minutes, stirring, until the spinach is wilted and the tomato has softened.

          Flavor the Mixture: Stir in the soy sauce and sesame oil, then season with salt and freshly ground black pepper to taste. Remove the skillet from the heat and set the spinach-tomato mixture aside.

            Combine the Ingredients: Once the oats are cooked, fold the sautéed spinach and tomato mixture into the oats until everything is evenly combined.

              Cook the Eggs: In the same skillet you used for the vegetables, crack the eggs and cook them sunny-side up or to your preference.

                Serve and Garnish: Ladle the savory oatmeal into bowls and top each serving with a perfectly fried egg. Garnish with chopped green onions and sprinkle crumbled feta cheese on top for an optional creamy flavor burst.
