Instructions
In a mixing bowl, combine the thinly sliced chicken breasts with the Cajun seasoning. Toss the chicken until every piece is evenly coated with the spices.
In a skillet, heat the olive oil over medium-high heat. Carefully add the seasoned chicken slices into the pan and cook for approximately 5-7 minutes, stirring occasionally, until the chicken is fully cooked and no longer pink in the center.
Once the chicken is cooked, add the sliced red and green bell peppers along with the onion to the skillet. Stir-fry the mixture for an additional 3-4 minutes, or until the vegetables are tender-crisp. Season with salt and pepper to your preference, then remove from heat.
In a separate pan or using a microwave, warm the flour tortillas for a few seconds until they are soft and pliable, making them easier to roll.
To assemble your wraps, spread a generous layer of ranch dressing or spicy mayo across the center of each tortilla.
Place a handful of mixed greens on top of the dressing, follow it with a portion of the chicken and vegetable mixture, then add a spoonful of diced tomatoes and a sprinkle of shredded cheddar cheese.
Carefully roll up each tortilla, tucking in the edges as you go to securely wrap the filling within.
For an extra touch, slice each wrap diagonally in half before serving. Enjoy immediately, or wrap in foil for a fantastic grab-and-go meal.

Arrange the wraps on a serving platter, garnished with extra diced tomatoes and a small bowl of your chosen dressing for dipping.
