Instructions
In a skillet over medium heat, add the ground turkey or beef. Cook for about 5-7 minutes, stirring occasionally, until the meat is browned and fully cooked. If there is excess fat, drain it off carefully.
Sprinkle in the taco seasoning and pour in a splash of water. Stir to combine, then let it cook for another 2-3 minutes until the mixture is aromatic and well blended. Once done, remove from heat and let it cool slightly.
In a separate mixing bowl, combine the black beans, corn, diced tomatoes, finely chopped red onion, lime juice, and a pinch of salt and pepper. Toss everything together until evenly mixed.
Gently fold the cooked meat into the vegetable mixture until all components are thoroughly combined, creating a flavorful filling.
Take each avocado half and fill them generously with the prepared taco filling, heaping it atop for a delightful presentation.
Sprinkle shredded cheese and chopped cilantro over each stuffed avocado to enhance flavor and visual appeal.
