Preheat your oven to 350°F (175°C). Prepare a 9x9-inch baking dish by lightly greasing it with cooking spray or a bit of butter to prevent sticking.
In a spacious mixing bowl, combine the rolled oats and almond milk. Stir in the diced apples, maple syrup, brown sugar, cinnamon, nutmeg, salt, and vanilla extract, mixing thoroughly until all ingredients are well incorporated.
If you’re opting for nuts and dried fruit, gently fold them into the mixture until evenly distributed.
Pour the oatmeal mixture into the greased baking dish, spreading it out evenly for consistent baking.
Place the baking dish in the preheated oven and bake for 30-35 minutes. Look for a lightly golden top and a firm center, which indicates it's done.
Once baked to perfection, take the dish out of the oven and allow it to cool for about 5-10 minutes. This will make slicing easier. Cut into squares or rectangles as preferred.
